These are the icecream sandwiches I mentioned in my last post. I got the recipe from Martha Stewart online. I used mint chip icecream instead of strawberry (since I hate strawberry icecream). They are really good except that the cookies are a little hard when they are frozen. But that may be because I cut out my cookies too thick? Otherwise, it’s a fun recipe that can be used for any holiday!
