For the last 8 weeks, I’ve been participating in a health challenge to try to shape up my life. Part of the challenge involves eliminating from my life one of my “addictions.” I picked playing games on my phone because I tend to waste so much time on them and in the meantime I get nothing done. I have to tell you, I have not played a single game on my phone in 8 weeks – but that’s only because I simply replaced my game playing addiction with a Pinterest addiction. Sigh! I guess I need my down-time one way or another.
So when I needed to make a dessert for a gathering today, I chose one of the awesome looking recipes from Pinterest and got to work. Only mine didn’t turn out so wonderful. And, with only a few hours to spare, I had to come up with another idea, and it had to include ingredients I had on hand.

Thus, the Chocolate Butterscotch Pretzel Bar was born out of the scraps of my pantry. It’s kind of like a homemade peanut butter cup, but made with pretzels instead of graham crackers (I had none of those), and with half peanut butter and half Nutella, because I didn’t have enough peanut butter either. And with a butterscotch topping instead of chocolate, it’s bound to become one of my husband’s favorites.

Now, I realize these don’t look all that delicious. But let me tell you, they are surprisingly good. I’m glad I’m giving them to others or my little health challenge would be down the tubes!

- nonstick cooking spray
- 2 cups powdered sugar
- 1/2 cup creamy peanut butter
- 1/2 cup chocolate hazelnut spread
- 6 Tbsp butter melted
- 2 cups crushed pretzels
- 11 ounces butterscotch-flavored chips
- 1/4 cup whipping cream
- Line a 13x9x2 inch pan with foil or parchment paper and lightly spray with cooking spray. Set aside.
- In a large mixing bowl, mix the powdered sugar, peanut butter, hazelnut spread, and butter until combined. Stir in the crushed pretzels. Press the mixture into the prepared pan.
- In a medium saucepan, combine the butterscotch chips with the whipping cream. Stir over lower heat until the mixture is melted.
- Pour the mixture evenly over the pretzel mixture and carefully spread it evenly across the top.
- Cover and chill for at least 2 hours. Cut into bars and enjoy!
