I’ve discovered a really yummy way to make easy roast beef in the crockpot. Just add the roast to the crockpot and cover with 1 cup beef broth and 1 cup salsa. Cook until roast is done (5-6 hours on low in my crockpot). About 20 minutes before serving, take out the roast and pour all the juices into a saucepan. (Put roast back in crockpot to stay warm). Boil down half of it. Then serve over the roast. (You could also throw carrots/potatoes in there too I suppose).
Then, if you have leftovers, make a stir-fry with it. Just cook 1 onion, 1 red bell pepper, and 2 stalks of celery in 1-2 T olive oil until soft. Add 2-3 cups of cubed roast beef. Heat through. Then add 1/2 cup beef broth, 1 T soy sauce and 2 t. sesame oil (I also added 1 T sherry – just because I had some leftover). Let it simmer for 5 or so minutes. Serve over steamed rice. Yummy! (You could probably throw in other stir fry vegies too – snow peas, green peppers, mushrooms – whatever you have on hand).
