I have quite a few boxes of Velveeta mac n’ cheese in the house right now because the store had them on sale for .69 and my DD loves it. It makes too much for just her, so I end up eating it too (which is probably not the healthiest lunch I could be having). So today, after spooning out her portion, I decided to add something of nutritional value to it. I added about 12 ounces of leftover pork roast (cut into small cubes) and a 10 ounce can of Rotel diced tomatoes with green chilies (drained of juice). The end result was actually pretty good (DH says he loves it).
It’s definitely not for someone who doesn’t like spicy dishes!
Most likely the BEST mac n’ cheese ever.
